- 4 boneless, skinless chicken breasts
- 2 large onions, thinly sliced
- 2 cups beef broth
- 1 packet French onion soup mix
- 1 cup shredded Gruyère or Swiss cheese
- 2 tbsp butter
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Sauté the onions: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and cook, stirring occasionally, until golden brown and caramelized (about 10-15 minutes).
- Layer the crock pot: Place the chicken breasts in the crock pot and season with salt and pepper. Add the caramelized onions on top of the chicken.
- Prepare the broth: In a bowl, mix the beef broth with the French onion soup mix, then pour over the chicken and onions in the crock pot.
- Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
- Add the cheese: In the last 15 minutes of cooking, sprinkle the shredded Gruyère or Swiss cheese over the chicken. Allow it to melt before serving.
- Serve: Garnish with fresh parsley and serve over rice, mashed potatoes, or with crusty bread to soak up the delicious onion broth!
Notes
- For extra flavor, you can add a splash of white wine or a few sprigs of thyme to the crockpot.
- If you prefer a more intense onion flavor, cook the onions for a bit longer before adding them to the crockpot.
