4 boneless, skinless chicken breasts
2 large onions, thinly sliced
2 cups beef broth
1 packet French onion soup mix
1 cup shredded Gruyère or Swiss cheese
2 tbsp butter
1 tbsp olive oil

Instructions
Sauté the onions: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and cook, stirring occasionally, until golden brown and caramelized (about 10-15 minutes).
Layer the crock pot: Place the chicken breasts in the crock pot and season with salt and pepper. Add the caramelized onions on top of the chicken.
Prepare the broth: In a bowl, mix the beef broth with the French onion soup mix, then pour over the chicken and onions in the crock pot.
