This French Onion Chicken is a deliciously savory meal made in the crockpot with tender chicken breasts, caramelized onions, and melted Gruyère or Swiss cheese. Perfect for a comforting family dinner!

Ingredients

Scale
  1. 4 boneless, skinless chicken breasts
  2. 2 large onions, thinly sliced
  3. 2 cups beef broth
  4. 1 packet French onion soup mix
  5. 1 cup shredded Gruyère or Swiss cheese
  6. 2 tbsp butter
  7. 1 tbsp olive oil
  8. Salt and pepper to taste
  9. Fresh parsley for garnish

Instructions

  • Sauté the onions: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and cook, stirring occasionally, until golden brown and caramelized (about 10-15 minutes).
  • Layer the crock pot: Place the chicken breasts in the crock pot and season with salt and pepper. Add the caramelized onions on top of the chicken.
  • Prepare the broth: In a bowl, mix the beef broth with the French onion soup mix, then pour over the chicken and onions in the crock pot.
  • Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  • Add the cheese: In the last 15 minutes of cooking, sprinkle the shredded Gruyère or Swiss cheese over the chicken. Allow it to melt before serving.
  • Serve: Garnish with fresh parsley and serve over rice, mashed potatoes, or with crusty bread to soak up the delicious onion broth!

Notes

  • For extra flavor, you can add a splash of white wine or a few sprigs of thyme to the crockpot.
  • If you prefer a more intense onion flavor, cook the onions for a bit longer before adding them to the crockpot.
