Description
Light, airy French chouquettes are delightful puffs of choux pastry topped with crunchy pearl sugar, perfect for breakfast or a sweet snack.
Ingredients

- ½ cup (120ml) water
- ½ cup (120ml) milk
- ½ cup (120g) unsalted butter, diced
- ½ teaspoon salt
- 1 teaspoon granulated sugar
- 1¼ cup (150g) all-purpose flour, sifted
- 4 large eggs
- 2–3 tablespoons (about 30g) pearl sugar, to decorate
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a saucepan, combine water, milk, butter, salt, and sugar. Bring to a boil over medium heat.
- Remove from heat and stir in flour all at once. Return to heat and stir vigorously until dough forms a smooth ball and pulls away from the sides, about 2 minutes.
- Let dough cool slightly, then beat in eggs one at a time, mixing well after each addition until smooth and glossy.
- Transfer dough to a piping bag and pipe small mounds onto the prepared baking sheet.
- Sprinkle generously with pearl sugar.
- Bake for 20–25 minutes or until puffed and golden. Do not open the oven during baking.
- Let cool slightly before serving. Best enjoyed fresh.
