1 ¼ cups milk (any type)
1 egg
3 tablespoons melted butter
2 teaspoons vanilla extract (optional)
Instructions
Make the Batter:
In a large bowl, sift together the flour, baking powder, salt, and sugar.
Add milk, egg, melted butter, and vanilla (if using). Mix gently until just combined. A few lumps are okay—don’t overmix!
Cook the Pancakes:
Heat a non-stick griddle or skillet over medium heat. Lightly grease with butter or oil.
Pour ¼ cup of batter onto the hot griddle for each pancake.
Cook until bubbles form on the surface and the edges look set (about 2 minutes). Flip and cook for 1-2 more minutes until golden brown.
Remove from the pan and keep warm until ready to serve.
