An easy and healthy baked omelet dish made with fresh spinach, shallots, eggs, and feta cheese, perfect for breakfast or a light lunch.

- Olive oil spray
- 2 shallots, sliced
- 5 oz fresh spinach
- 6 eggs
- ¾ tsp kosher salt
- ½ tsp oregano
- ½ tsp garlic powder
- ½ cup fat-free feta cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Spray a frying pan with olive oil spray. Add sliced shallots and cook for about 5 minutes until tender.
- Add the fresh spinach to the pan and cover with a lid to wilt.
- Spray a 2.5 qt baking dish with olive oil spray. Spread the spinach and shallot mixture evenly in the dish.
- In a bowl, whisk together the eggs, kosher salt, oregano, and garlic powder.
- Pour the egg mixture over the vegetables in the baking dish.
- Sprinkle the feta cheese evenly over the top.
- Bake for about 30 minutes, or until the omelet is set and slightly golden on top.
Notes
- Use full-fat feta if preferred for richer flavor.
- Can be made ahead and reheated.
- Add cooked bacon or diced tomatoes for variation.
- Perfect for meal prep — cut into squares for grab-and-go breakfasts.
