This Taco Rice is a flavorful and easy-to-make dish that combines seasoned ground beef, tender rice, and melted cheddar cheese. Perfect for a quick weeknight dinner, it’s a great side dish or can be served as a main course. Top with your favorite taco toppings for extra flavor!

Ingredients

  1. 1 pound ground beef

  2. 1 packet taco seasoning

  3. 2 cups water

  4. 2 cups Minute Rice, uncooked

  5. 1 cup salsa

  6. 1 cup shredded cheddar cheese

Instructions

  • In a large skillet, brown and crumble ground beef. Drain excess grease.

  • Add in taco seasoning and water. Stir well and allow the mixture to come to a boil.

  • Turn down heat, then add in uncooked Minute Rice and stir.

  • Cover and cook for about 5 minutes (until rice is tender).

  • Remove the lid and stir in salsa and cheese.

 

  • Turn off the heat and it’s ready to serve!

Notes

  • For a spicier version, use hot salsa or add some jalapeños to the dish.

  • You can swap out cheddar for another type of cheese, like Monterey Jack or Mexican blend, for different flavors.

  • For extra toppings, consider adding sour cream, chopped cilantro, or diced avocado.

 

  • If you prefer to make this a full meal, you can add beans or corn to the rice.
