Ingredients

Scale

Potatoes:

  • 3 lbs small baby Yukon Gold potatoes, cut into ½-inch bite-sized pieces
  • ¼ cup olive oil (or extra virgin olive oil)
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper

Herbed Sauce:

  • 3 tablespoons fresh lemon juice
  • 2 garlic cloves, minced
  • 2 teaspoons coarse ground Dijon mustard
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon fresh rosemary, chopped
  • ¼ teaspoon kosher salt
  • 2 tablespoons olive oil
  • ¼ cup Parmesan cheese (shaker or grated)

Instructions

  1. Preheat oven: Heat oven to 425°F (220°C).
  2. Prepare potatoes: In a large bowl, toss the potatoes with ¼ cup olive oil, kosher salt, and pepper until evenly coated. Spread potatoes on a baking sheet in a single layer.
  3. Roast potatoes: Bake for 30–40 minutes, turning halfway through, until potatoes are golden brown and tender when pierced with a fork.
  4. Make herbed sauce: While potatoes roast, whisk together lemon juice, minced garlic, Dijon mustard, chopped chives, dill, parsley, rosemary, kosher salt, and 2 tablespoons olive oil in a small bowl.
  5. Combine and serve: Toss the roasted potatoes with the herbed sauce. Sprinkle with Parmesan cheese and serve warm.

Notes

  • Use Yukon Gold potatoes for their buttery texture and perfect roasting qualities.
  • Feel free to swap herbs based on preference or availability—thyme or basil work beautifully.
  • For an extra crispy finish, roast potatoes on a preheated baking sheet.
  • These potatoes pair wonderfully with grilled meats, roasted chicken, or a fresh green salad.
  • Leftovers taste great cold or reheated in a skillet for extra crispiness.
