Ingredients
Scale
Potatoes:
- 3 lbs small baby Yukon Gold potatoes, cut into ½-inch bite-sized pieces
- ¼ cup olive oil (or extra virgin olive oil)
- 1 teaspoon kosher salt
- 1 teaspoon pepper
Herbed Sauce:
- 3 tablespoons fresh lemon juice
- 2 garlic cloves, minced
- 2 teaspoons coarse ground Dijon mustard
- 2 tablespoons fresh chives, chopped
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- ½ teaspoon fresh rosemary, chopped
- ¼ teaspoon kosher salt
- 2 tablespoons olive oil
- ¼ cup Parmesan cheese (shaker or grated)
Instructions
- Preheat oven: Heat oven to 425°F (220°C).
- Prepare potatoes: In a large bowl, toss the potatoes with ¼ cup olive oil, kosher salt, and pepper until evenly coated. Spread potatoes on a baking sheet in a single layer.
- Roast potatoes: Bake for 30–40 minutes, turning halfway through, until potatoes are golden brown and tender when pierced with a fork.
- Make herbed sauce: While potatoes roast, whisk together lemon juice, minced garlic, Dijon mustard, chopped chives, dill, parsley, rosemary, kosher salt, and 2 tablespoons olive oil in a small bowl.
- Combine and serve: Toss the roasted potatoes with the herbed sauce. Sprinkle with Parmesan cheese and serve warm.
Notes
- Use Yukon Gold potatoes for their buttery texture and perfect roasting qualities.
- Feel free to swap herbs based on preference or availability—thyme or basil work beautifully.
- For an extra crispy finish, roast potatoes on a preheated baking sheet.
- These potatoes pair wonderfully with grilled meats, roasted chicken, or a fresh green salad.
- Leftovers taste great cold or reheated in a skillet for extra crispiness.
