Description

Ingredients

  • 16 oz (about 3 cups) mixed nuts (cashews, almonds, pecans, walnuts, peanuts – omit peanuts for Paleo)
  • 1 large egg white
  • ½ cup honey
  • 1½ tsp Kosher salt
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • ½ tsp chili powder
  • ½ tsp red pepper flakes
  • ½ tsp cayenne pepper (use ¼ tsp for milder mix)
  • ¼ tsp cracked black pepper
  • ¼ tsp ground ginger
  • ¼ tsp ground cloves

Instructions

  1. Preheat oven to 250°F. Line a baking sheet with parchment paper.
  2. Whip the egg white until frothy. Add the nuts and toss to coat.
  3. Add honey and all the spices. Mix until evenly coated.
  4. Spread nuts evenly on the baking sheet. Roast for 45–60 minutes, stirring every 15 minutes.
  5. Cool for 10 minutes, then break into chunks. Store in an airtight container for up to 2 weeks.

  • Use raw, unsalted nuts for best flavor balance.
  • Adjust cayenne and red pepper flakes based on spice tolerance.
