Description

This vibrant, spicy-sweet Cinnamon Rock Candy is a festive favorite that’s as beautiful as it is delicious. Perfect for holidays or gifting, this homemade treat brings a nostalgic crunch and bold cinnamon heat


Ingredients

Scale

1 cup water
3 3/4 cups sugar
1 1/4 cups light corn syrup
1 tsp red food coloring
1–2 tsp cinnamon oil (to taste)
1 1/2 cups powdered sugar
Butter for greasing


Instructions

  • Butter a 15x10x1-inch pan, line with parchment paper, and butter the parchment.

  • In a large saucepan, mix water, sugar, corn syrup, and red food coloring. Stir over medium-high heat until sugar dissolves.

  • Attach a candy thermometer. Bring mixture to a boil and heat to 300°F (hard crack stage), about 20 minutes.

  • Remove from heat and carefully stir in cinnamon oil. Pour immediately into the prepared pan.

  • Let cool completely for at least 4 hours.

  • Dust with powdered sugar, flip onto a board, remove parchment, and break into bite-sized pieces.

  • Dust again with powdered sugar if desired.

 

  • Store in an airtight container.


Notes

  • Cinnamon oil is potent—use a well-ventilated area.

  • You can swap red coloring for green or omit it.

 

  • Makes great holiday gifts wrapped in cellophane.
