Description
These Mediterranean Beef Kabobs are juicy, flavorful, and paired perfectly with a creamy whipped feta tzatziki dip — a vibrant and healthy meal straight from the grill.
Ingredients

- 2 lbs. top sirloin, cut into 1 1/2” cubes
- 2 red bell peppers, sliced into 1 1/2” chunks
- 1 pint cherry/grape tomatoes
- 2 small or 1 large zucchini, cut into 1/4” slices
- 1 large red onion, cut into 1 1/2” chunks
- Marinade:
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 2 tablespoons balsamic vinegar
- 1 tablespoon dried oregano
- 2 teaspoons paprika
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
- Whipped Feta Tzatziki Dip:
- 1/2 large cucumber, peeled
- 1/2 teaspoon salt
- 4 oz cream cheese, cubed and softened
- 2 oz feta at room temperature (about ⅓ cup loosely packed feta)
- 8 oz plain Greek yogurt (1 cup)
- 3 cloves garlic, peeled
- 1/3 cup loosely packed fresh dill
- 2 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together all marinade ingredients: olive oil, lemon juice, balsamic vinegar, oregano, paprika, garlic powder, onion powder, cumin, coriander, sugar, salt, cayenne, and black pepper.
- Place beef cubes, bell peppers, zucchini, and red onion in a large zip-top bag or bowl. Pour in the marinade and toss to coat evenly. Refrigerate for at least 1 hour or overnight.
- Grate the cucumber, toss with salt, and let sit for 5-10 minutes. Squeeze out the excess liquid.
- In a blender or food processor, combine cucumber, cream cheese, feta, yogurt, garlic, dill, lemon juice, and vinegar. Blend until smooth. Season with salt and pepper to taste.
- Thread marinated beef and vegetables onto skewers. Add cherry tomatoes to skewers as desired.
- Preheat grill to medium-high heat. Grill kabobs for 6–8 minutes per side, until beef reaches desired doneness.
- Serve hot with whipped feta tzatziki dip on the side. Enjoy!
Notes
- Marinate the beef and vegetables overnight for maximum flavor.
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- You can substitute lamb or chicken for beef if preferred.
- The whipped feta tzatziki also makes a great dip for pita or raw veggies.
