A flavorful grilled chicken burrito featuring smoky chipotle marinade, fresh vegetables, and a zesty chipotle ranch sauce wrapped in a warm tortilla.
Ingredients

- Chicken breast or thighs
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 tbsp lime juice
- 1 tsp chipotle chili powder or 1 tbsp adobo sauce
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper, to taste
- 1/2 cup ranch dressing
- 1–2 chipotle peppers in adobo sauce, minced
- 1 tbsp lime juice
- 1/2 tsp garlic powder
- Salt, to taste
- Fresh tomatoes, diced
- Red onion, finely chopped
- Cilantro, chopped
- Jalapeño or green chili, sliced (optional)
- Lettuce or spinach (optional)
- Shredded cheese
- Avocado or guacamole (optional)
- Cooked rice (optional)
- Large flour tortillas
Instructions
- In a bowl, mix olive oil, minced garlic, lime juice, chipotle chili powder or adobo sauce, paprika, cumin, salt, and pepper.
- Coat the chicken with the marinade and let sit for at least 30 minutes.
- Grill the marinated chicken over medium heat until cooked through and tender, about 6–8 minutes per side. Slice into strips.
- To make the sauce, mix ranch dressing, minced chipotle peppers, lime juice, garlic powder, and salt until smooth. Adjust to taste.
- Warm the tortillas and layer with grilled chicken, tomatoes, red onion, cilantro, optional jalapeños, lettuce/spinach, cheese, avocado/guacamole, rice, and chipotle ranch sauce.
- Roll into burritos, folding in the sides and rolling tightly.
- Serve warm and enjoy.

- Use Greek yogurt as a base for a lighter chipotle ranch sauce.
