Description

A flavorful grilled chicken burrito featuring smoky chipotle marinade, fresh vegetables, and a zesty chipotle ranch sauce wrapped in a warm tortilla.


Ingredients

  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp lime juice
  • 1 tsp chipotle chili powder or 1 tbsp adobo sauce
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 1/2 cup ranch dressing
  • 12 chipotle peppers in adobo sauce, minced
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • Salt, to taste
  • Fresh tomatoes, diced
  • Red onion, finely chopped
  • Cilantro, chopped
  • Jalapeño or green chili, sliced (optional)
  • Lettuce or spinach (optional)
  • Shredded cheese
  • Avocado or guacamole (optional)
  • Cooked rice (optional)
  • Large flour tortillas

Instructions

  1. In a bowl, mix olive oil, minced garlic, lime juice, chipotle chili powder or adobo sauce, paprika, cumin, salt, and pepper.
  2. Coat the chicken with the marinade and let sit for at least 30 minutes.
  3. Grill the marinated chicken over medium heat until cooked through and tender, about 6–8 minutes per side. Slice into strips.
  4. To make the sauce, mix ranch dressing, minced chipotle peppers, lime juice, garlic powder, and salt until smooth. Adjust to taste.
  5. Warm the tortillas and layer with grilled chicken, tomatoes, red onion, cilantro, optional jalapeños, lettuce/spinach, cheese, avocado/guacamole, rice, and chipotle ranch sauce.
  6. Roll into burritos, folding in the sides and rolling tightly.
  7. Serve warm and enjoy.
