Caramel
- 1 cup sugar
- 4 Tbsp water
For the Flan
- 6 large egg yolks
- 1/2 cup condensed milk
- 1 1/4 cup evaporated milk
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Make the caramel: In a saucepan over medium heat, combine sugar and water. Cook without stirring until the mixture turns a golden amber color. Immediately pour the caramel into your flan mold (llanera or round baking dish), tilting to coat the bottom evenly. Set aside to cool and harden.
- Prepare the flan mixture: In a bowl, gently whisk the egg yolks. Add condensed milk, evaporated milk, vanilla extract, and salt. Stir until fully combined, being careful not to create bubbles.
- Strain the mixture: Pour the flan mixture through a fine sieve into the caramel-lined mold to ensure a silky texture.

Steam or bake:
- To steam: Cover the mold with foil and steam over low heat for 30–35 minutes, or until set.
- To bake: Preheat oven to 175°C (350°F). Place the mold in a larger baking pan filled with hot water and bake for 45–50 minutes, or until set.
- Cool and serve: Allow to cool to room temperature, then refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges and invert onto a plate to release the flan.
Notes
- Use fresh egg yolks for the richest flavor and smoothest texture.
- Steaming results in a softer texture, while baking creates a firmer, more traditional finish.
- You can make this in advance—the flavor deepens after chilling overnight.
