Description

Juicy and flavor-packed, this Chorizo Stuffed Chicken Breast wrapped in crispy bacon is a showstopper! Perfect for quick high protein meals, this dish features creamy chorizo, Manchego cheese, and savory spices in every bite. It’s great for easy entertaining or a protein-rich dinner. Serve with a light salad or roasted veggies and enjoy a restaurant-worthy dish at home.


Ingredients

  1. For the Chorizo Filling:
    1 teaspoon olive oil
    8 ounces fresh chorizo, casings removed
    1 small onion, chopped
    2 garlic cloves, minced
    1 tablespoon sherry vinegar
    4 ounces cream cheese, softened
    1/2 cup canned petite diced tomatoes
    4 ounces Manchego cheese, shredded
    Salt and pepper, to taste
    1/3 cup chopped parsley

    For the Chicken Breasts:
    4 medium chicken breasts
    1/2 teaspoon smoked paprika
    12 to 16 slices bacon (depending on size of breasts)


Instructions

  • In a skillet, heat olive oil over medium-high heat. Add chorizo and cook, crumbling with a spoon, for about 5 minutes. Remove with a slotted spoon and set aside.

  • Discard excess fat, leaving 2 tsp in the skillet. Sauté onion and garlic until softened, about 2 minutes.

  • Return chorizo to pan, add sherry vinegar, and cook until evaporated. Scrape up any brown bits.

  • Let mixture cool, then stir in cream cheese, diced tomatoes, Manchego, parsley, salt, and pepper. Mix well and reserve.

  • Preheat oven to 400°F. Butterfly each chicken breast and pound flat to about 1/4-inch thickness.

  • Season chicken with salt, pepper, and smoked paprika. Spread filling over each, roll tightly, and wrap with 3–4 slices of bacon. Secure with toothpicks.

  • Place stuffed chicken breasts in a baking dish or on a sheet pan. Bake for 45–50 minutes, or until bacon is crispy and chicken reaches 165°F internally.

 

  • Let rest a few minutes before slicing. Serve warm.


Notes

  • Use toothpicks to help the bacon stay wrapped around the chicken during baking.

  • Substitute Manchego with sharp cheddar or Monterey Jack if needed.

  • Can be prepped a day in advance and stored in the fridge until ready to bake.

 

  • For extra crispy bacon, broil for 2–3 minutes at the end.
