    For the Creamy Garlic Sauce:

    • 1 tablespoon butter or oil
    • 2 cloves garlic, minced
    • 1/4 cup mayonnaise
    • 2 tablespoons sriracha (or hot sauce of your choice)
    • 1 tablespoon soy sauce
    • 1 teaspoon rice vinegar
    • 1/2 teaspoon sesame oil

    For the Ramen:

    1. 2 packs instant ramen noodles (discard seasoning packets)
    2. 4 cups chicken broth (or water)
    3. 1 cup frozen vegetables (peas, carrots, corn, or a mix)
    4. 2 green onions, thinly sliced
    5. Sesame seeds (for garnish)

Instructions

  • Marinate the chicken: In a bowl, combine the diced chicken with soy sauce, chili sauce, sesame oil, and cornstarch (if using). Stir to coat and let the chicken marinate for at least 10 minutes while you prepare the rest of the dish.
  • Cook the chicken: Heat a skillet or wok over medium-high heat. Add the marinated chicken and cook for 5-7 minutes, or until the chicken is cooked through and slightly browned. Remove from heat and set aside.
  • Prepare the creamy garlic sauce: In a small saucepan, melt the butter or oil over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant. Remove from heat and let cool slightly. In a separate bowl, whisk together the mayonnaise, sriracha, soy sauce, rice vinegar, and sesame oil. Add the cooked garlic and mix to combine.
  • Cook the ramen: Bring the chicken broth (or water) to a boil in a medium pot. Add the ramen noodles (discard the seasoning packets) and cook according to the package instructions. Add the frozen vegetables during the last 2 minutes of cooking.
  • Assemble the ramen: Divide the cooked ramen and broth between two bowls. Top with the cooked chicken, a generous drizzle of the creamy garlic sauce, sliced green onions, and a sprinkle of sesame seeds.
