- 4 large eggs
- 1/2 cup feta cheese, crumbled
- 1 cup mushrooms, sliced
- 1/2 cup milk
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/2 tsp garlic powder
- 1/4 cup fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C) and grease an 8×8-inch baking dish with non-stick spray or butter.
- In a skillet over medium heat, heat olive oil and sauté the onion and mushrooms for 5-7 minutes until tender and liquid has evaporated. Remove from heat and let cool slightly.
- In a large bowl, whisk together eggs, milk, garlic powder, salt, and black pepper until well combined.
- Fold in crumbled feta cheese and the cooled mushroom-onion mixture into the egg mixture.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 20-25 minutes until the eggs are set and the top is lightly golden.
- Allow to cool for a few minutes, then cut into squares and serve warm. Garnish with fresh parsley if desired.
