Description

Feta & Mushroom Brunch Squares are a savory baked egg dish loaded with mushrooms, feta cheese, and aromatic seasonings, perfect for a nutritious breakfast or brunch.


Ingredients

  • 4 large eggs
  • 1/2 cup feta cheese, crumbled
  • 1 cup mushrooms, sliced
  • 1/2 cup milk
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 cup fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease an 8×8-inch baking dish with non-stick spray or butter.
  2. In a skillet over medium heat, heat olive oil and sauté the onion and mushrooms for 5-7 minutes until tender and liquid has evaporated. Remove from heat and let cool slightly.
  3. In a large bowl, whisk together eggs, milk, garlic powder, salt, and black pepper until well combined.
  4. Fold in crumbled feta cheese and the cooled mushroom-onion mixture into the egg mixture.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake for 20-25 minutes until the eggs are set and the top is lightly golden.
  7. Allow to cool for a few minutes, then cut into squares and serve warm. Garnish with fresh parsley if desired.
