Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, espresso powder, and kosher salt.
  3. In a large bowl, cream the butter, brown sugar, and granulated sugar together using an electric mixer until light and fluffy, about 3-4 minutes.
  4. Add the egg and vanilla extract to the butter mixture and beat until smooth.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
