Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, espresso powder, and kosher salt.
- In a large bowl, cream the butter, brown sugar, and granulated sugar together using an electric mixer until light and fluffy, about 3-4 minutes.
- Add the egg and vanilla extract to the butter mixture and beat until smooth.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Fold in the chopped dark chocolate, ensuring it’s evenly distributed.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
