Description

  1. For the Eggplant Pizzas:

    • 1 large eggplant

    • 2 tbsp olive oil

    • 1 tsp salt

    • ½ tsp black pepper

    • ½ cup pizza sauce

    • 1 cup mozzarella cheese, divided

    • ½ cup provolone cheese, divided

    • ¼ cup mushrooms, chopped

    • ¼ cup onions, chopped

    • ½ cup bell peppers, diced

    • 1 tbsp Italian seasoning


Instructions

  • Prepare the Eggplant:

    • Preheat oven to 400°F (200°C).

    • Slice the eggplant lengthwise into ⅓-inch slices or into 2-inch rounds.

  • Bake the Eggplant:

    • Brush both sides of the eggplant slices with olive oil and place them on a lined baking sheet.

    • Sprinkle with salt and black pepper, then bake for 10 minutes until soft.

  • Assemble the Pizzas:

    • Spread pizza sauce over each roasted eggplant slice.

    • Sprinkle with some of the mozzarella and provolone cheese.

    • Add mushrooms, onions, and bell peppers on top.

    • Top with the remaining cheese and sprinkle with Italian seasoning.

 

  • Broil & Serve:

    • Set oven to broil and bake for 5 minutes or until the cheese is golden and melted.


Notes

  • You can customize the toppings based on your preferences by adding other veggies or meats.

  • For a crispier texture, you can roast the eggplant slices for a few extra minutes before adding the toppings.
