½ cup pizza sauce

1 cup mozzarella cheese, divided

½ cup provolone cheese, divided

¼ cup mushrooms, chopped

¼ cup onions, chopped

½ cup bell peppers, diced

1 tbsp Italian seasoning

Instructions

Prepare the Eggplant:

Preheat oven to 400°F (200°C).

Slice the eggplant lengthwise into ⅓-inch slices or into 2-inch rounds.

Bake the Eggplant:
