Description

This Easy Tuna Melt is a classic, comforting sandwich made with creamy tuna salad, cheddar cheese, and crispy grilled whole wheat bread. A perfect meal for any time of the day.


Ingredients

  • 4 small cans albacore tuna, drained
  • ¼ cup mayonnaise
  • ¼ cup finely chopped celery
  • ¼ cup finely diced red bell pepper
  • ¼ cup finely chopped red onion
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 16 slices whole wheat bread
  • 8 slices cheddar cheese (or more, to taste)
  • ¼ cup softened butter

Instructions

  1. In a large bowl, combine the tuna, mayonnaise, celery, red bell pepper, red onion, Dijon mustard, parsley, salt, and pepper. Mix until well combined.
  2. Lay out 8 slices of bread and spread a generous amount of the tuna mixture on each.
  3. Top each with a slice (or two) of cheddar cheese.
  4. Cover with the remaining slices of bread to form 8 sandwiches.
  5. Butter the outside of each sandwich (one side per slice).
  6. Heat a skillet or griddle over medium heat. Cook the sandwiches in batches, buttered side down, for 3–4 minutes per side, or until golden brown and the cheese is melted.
  7. Serve and enjoy!
