This Easy Tuna Melt is a classic, comforting sandwich made with creamy tuna salad, cheddar cheese, and crispy grilled whole wheat bread. A perfect meal for any time of the day.

- 4 small cans albacore tuna, drained
- ¼ cup mayonnaise
- ¼ cup finely chopped celery
- ¼ cup finely diced red bell pepper
- ¼ cup finely chopped red onion
- 1 tablespoon Dijon mustard
- 2 tablespoons fresh parsley, chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
- 16 slices whole wheat bread
- 8 slices cheddar cheese (or more, to taste)
- ¼ cup softened butter
Instructions
- In a large bowl, combine the tuna, mayonnaise, celery, red bell pepper, red onion, Dijon mustard, parsley, salt, and pepper. Mix until well combined.
- Lay out 8 slices of bread and spread a generous amount of the tuna mixture on each.
- Top each with a slice (or two) of cheddar cheese.
- Cover with the remaining slices of bread to form 8 sandwiches.
- Butter the outside of each sandwich (one side per slice).
- Heat a skillet or griddle over medium heat. Cook the sandwiches in batches, buttered side down, for 3–4 minutes per side, or until golden brown and the cheese is melted.
- Serve and enjoy!

- Adjust the amount of cheese based on your preference for a cheesier melt.
