  • 1.52 lbs ground beef
  • 12 taco-sized flour tortillas (or 9 burrito-sized)
  • 1 (16 oz) can beans (pinto, black, or refried)
  • 1 (1 oz) packet taco seasoning
  • 3.5 cups shredded cheese (Mexican blend, cheddar, pepper jack, etc.), divided into thirds

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Add taco seasoning and water according to the seasoning packet instructions. Stir to coat the meat and simmer until thickened.
  3. Preheat oven to 350°F (175°C).
  4. In a 9×13-inch baking dish, place a layer of tortillas to cover the bottom.
  5. Spread a portion of the seasoned beef over the tortillas, then spoon over some of the beans, and sprinkle with a third of the cheese.
  6. Repeat the layers — tortillas, beef, beans, and cheese — until all ingredients are used, finishing with a generous cheese layer on top.
  7. Cover with foil and bake for 25 minutes.
  8. Remove foil and bake uncovered for another 10 minutes, until the cheese is melted and bubbly.
  9. Let it cool slightly before slicing and serving.

Notes

  • Use corn tortillas for a gluten-free version with extra texture.
  • Refried beans will give a creamier texture, while black or pinto beans add a hearty bite.
  • Top with sliced green onions, sour cream, or chopped cilantro for extra flavor.
