- 12 taco-sized flour tortillas (or 9 burrito-sized)
- 1 (16 oz) can beans (pinto, black, or refried)
- 1 (1 oz) packet taco seasoning
- 3.5 cups shredded cheese (Mexican blend, cheddar, pepper jack, etc.), divided into thirds

- In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
- Add taco seasoning and water according to the seasoning packet instructions. Stir to coat the meat and simmer until thickened.
- Preheat oven to 350°F (175°C).
- In a 9×13-inch baking dish, place a layer of tortillas to cover the bottom.
- Spread a portion of the seasoned beef over the tortillas, then spoon over some of the beans, and sprinkle with a third of the cheese.
- Repeat the layers — tortillas, beef, beans, and cheese — until all ingredients are used, finishing with a generous cheese layer on top.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake uncovered for another 10 minutes, until the cheese is melted and bubbly.
- Let it cool slightly before slicing and serving.
Notes
- Use corn tortillas for a gluten-free version with extra texture.
- Refried beans will give a creamier texture, while black or pinto beans add a hearty bite.
- Top with sliced green onions, sour cream, or chopped cilantro for extra flavor.
