Description

Easy Spinach Cottage Cheese Flagels (Flat Bagels) are savory, cheesy, and fluffy bagels made with cottage cheese, spinach, and mozzarella—perfect for a quick and delicious breakfast or snack.


Ingredients

  • 1 cup cottage cheese
  • 1 cup + 2 tbsp all-purpose flour
  • 3 tsp baking powder
  • ½ tsp salt
  • 1 tbsp olive oil
  • 2 oz baby spinach, micro chopped
  • ½ cup shredded mozzarella cheese
  • 1 egg, lightly beaten (for egg wash)

Instructions

  1. Preheat oven to 375°F. Line a large rimmed baking sheet with parchment paper.
  2. In a mini food processor, add cottage cheese and pulse until smooth.
  3. In a large bowl, combine the cottage cheese, flour, baking powder, salt, olive oil, spinach, and mozzarella cheese. Mix until combined.
  4. Use your hands to form the dough into a 6-inch long log.
  5. Divide the dough into 6 equal pieces. Shape each piece into a flat circle and poke a hole in the middle with your finger.
  6. Place the flagels onto the prepared baking sheet.
  7. Brush the flagels with egg wash.
  8. Bake for 22-25 minutes, or until golden brown.
  9. Transfer the flagels to a wire rack to cool completely.
