- 1 cup cottage cheese
- 1 cup + 2 tbsp all-purpose flour
- 3 tsp baking powder
- ½ tsp salt
- 1 tbsp olive oil
- 2 oz baby spinach, micro chopped
- ½ cup shredded mozzarella cheese
- 1 egg, lightly beaten (for egg wash)
Instructions
- Preheat oven to 375°F. Line a large rimmed baking sheet with parchment paper.
- In a mini food processor, add cottage cheese and pulse until smooth.
- In a large bowl, combine the cottage cheese, flour, baking powder, salt, olive oil, spinach, and mozzarella cheese. Mix until combined.
- Use your hands to form the dough into a 6-inch long log.
- Divide the dough into 6 equal pieces. Shape each piece into a flat circle and poke a hole in the middle with your finger.
- Place the flagels onto the prepared baking sheet.
- Brush the flagels with egg wash.
- Bake for 22-25 minutes, or until golden brown.
- Transfer the flagels to a wire rack to cool completely.

Notes
- For a slightly different flavor, you can add garlic powder or onion powder to the dough.
