For the Pastry Dough (Pasta Frolla):
- 2 cups (250g) all-purpose flour
- ½ cup (100g) sugar
- ½ teaspoon baking powder
- 1 pinch salt
- ½ cup (115g) unsalted butter, cold & cubed
- 1 large egg
- 1 egg yolk
- ½ teaspoon vanilla extract (optional, for extra flavor)
For the Filling:
- ¾ cup (200g) jam of choice (apricot, raspberry, or cherry are classic)
- Powdered sugar (for dusting, optional)

Make the Dough
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- Add cold butter cubes and rub into the flour using your hands or a pastry cutter until it resembles coarse crumbs.
- Add egg, egg yolk, and vanilla extract, then mix until a dough forms.
- Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.

Roll & Assemble the Crostata
- Preheat the oven to 350°F (175°C).
- Roll out ⅔ of the dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.
- Spread jam evenly over the crust.

Make the Lattice
- Roll out the remaining dough, cut into strips, and arrange them in a lattice pattern on top of the jam filling.

Bake & Serve
- Bake for 30-35 minutes, until the pastry is golden brown.
- Let the crostata cool completely before slicing.
- Dust with powdered sugar and serve!

- Use your favorite jam flavor or mix and match (apricot, raspberry, or cherry work well).
- If you prefer a less sweet crostata, opt for a less sugary jam and dust with minimal powdered sugar.
