Instructions
- Prepare the Tomatoes: Trim, core, and finely dice the heirloom tomatoes (about 2 cups). Transfer the diced tomatoes to a colander, sprinkle with ½ tsp salt, and let sit for 20 minutes to 1 hour to drain excess moisture.
- Make the Marinade: In a small bowl, whisk together olive oil, shallot, capers, balsamic glaze, Dijon mustard, and fresh herbs.
- Marinate the Tomatoes: Shake the colander to release any remaining moisture. Add the tomatoes to the marinade and let sit for 20 minutes to absorb the flavors.
- Serve & Garnish: Taste and adjust seasoning if needed. Serve on toasted baguette slices and garnish with extra fresh herbs.
Notes
- If you prefer, you can use whole grain mustard for a slightly different flavor.
