Description

This heirloom tomato tartare is a simple yet elegant dish bursting with fresh flavors. A marinade of capers, shallots, balsamic glaze, and Dijon mustard enhances the natural sweetness of ripe tomatoes, making it the perfect appetizer. Serve it over toasted baguette slices for a light and sophisticated bite.

  1. 2 large ripe heirloom tomatoes, diced (~2 cups)
  2. ½ tsp kosher salt
  3. 1 tbsp extra-virgin olive oil
  4. ½ small shallot, finely chopped
  5. 1 tsp capers, drained and finely chopped
  6. ½ tsp balsamic glaze
  7. ½ tsp Dijon mustard (regular or whole grain)
  8. ½ tbsp fresh basil or parsley, finely chopped (plus extra for garnish)
  9. Toasted baguette slices, for serving

Instructions

  • Prepare the Tomatoes: Trim, core, and finely dice the heirloom tomatoes (about 2 cups). Transfer the diced tomatoes to a colander, sprinkle with ½ tsp salt, and let sit for 20 minutes to 1 hour to drain excess moisture.
  • Make the Marinade: In a small bowl, whisk together olive oil, shallot, capers, balsamic glaze, Dijon mustard, and fresh herbs.
  • Marinate the Tomatoes: Shake the colander to release any remaining moisture. Add the tomatoes to the marinade and let sit for 20 minutes to absorb the flavors.

 

  • Serve & Garnish: Taste and adjust seasoning if needed. Serve on toasted baguette slices and garnish with extra fresh herbs.

Notes

  • If you prefer, you can use whole grain mustard for a slightly different flavor.

 

  • For a low-carb option, serve the tartare over lettuce cups instead of baguette slices.
