- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 2 cups fish stock or vegetable broth
- 1 teaspoon smoked paprika
- Salt & pepper to taste
- 1 lb firm white fish (like cod or tilapia), cut into chunks
- 1/2 red bell pepper, chopped
- 1 zucchini, chopped
- Juice of 1 lemon
- Fresh parsley or basil for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until fragrant and soft.
- Add chopped red bell pepper, zucchini, smoked paprika, salt, and pepper. Cook for 3-4 minutes, stirring occasionally.
- Pour in diced tomatoes and fish stock or vegetable broth. Bring the mixture to a gentle simmer.
- Add the fish chunks to the pot. Cover and let simmer for 10-12 minutes, or until the fish is opaque and cooked through.
- Stir in fresh lemon juice just before serving. Garnish with chopped parsley or basil and serve hot.
Notes
- Use fresh or frozen fish; just ensure it is thawed if frozen.
