Description

This Easy Fish Stew Delight is a light and flavorful dish made with tender chunks of white fish, fresh vegetables, and aromatic spices—perfect for a healthy and hearty meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 2 cups fish stock or vegetable broth
  • 1 teaspoon smoked paprika
  • Salt & pepper to taste
  • 1 lb firm white fish (like cod or tilapia), cut into chunks
  • 1/2 red bell pepper, chopped
  • 1 zucchini, chopped
  • Juice of 1 lemon
  • Fresh parsley or basil for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until fragrant and soft.
  2. Add chopped red bell pepper, zucchini, smoked paprika, salt, and pepper. Cook for 3-4 minutes, stirring occasionally.
  3. Pour in diced tomatoes and fish stock or vegetable broth. Bring the mixture to a gentle simmer.
  4. Add the fish chunks to the pot. Cover and let simmer for 10-12 minutes, or until the fish is opaque and cooked through.
  5. Stir in fresh lemon juice just before serving. Garnish with chopped parsley or basil and serve hot.
