- 2 large eggs, room temperature
- ½ cup warm milk
- 1 tsp vanilla extract
- ¾ cup sugar

- ¼ cup cooking oil
- ¾ cup chopped pitted dates
- ½ cup chopped almonds and pecans
Instructions
- Preheat your oven to 175°C (350°F). Grease and flour a loaf pan or line it with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate large bowl, beat the eggs, then add warm milk, vanilla extract, and sugar. Mix until well combined.
- Melt the butter and stir it into the wet mixture along with the oil.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chopped dates and nuts.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For extra flavor, sprinkle a pinch of cinnamon or nutmeg into the dry ingredients.
- Use a mix of your favorite nuts or substitute with walnuts or hazelnuts.
