Instructions

  • Roast the Baby Potatoes:

    • Preheat your oven to 400°F (200°C).
    • Toss the halved or quartered baby potatoes in olive oil, salt, pepper, and dried thyme.
    • Spread them in a single layer on a baking sheet and roast for 25-30 minutes, or until golden brown and crispy on the outside, flipping halfway through.
  • Prepare the Creamy Garlic Sauce:

    • While the potatoes are roasting, heat butter in a medium skillet over medium heat.
    • Add the minced garlic and sauté for about 1 minute, until fragrant and golden brown (be careful not to burn it!).
    • Pour in the heavy cream and chicken broth, stirring to combine.
