Description

This Easy Chicken Cobbler Casserole is the perfect family-friendly comfort food! Made with rotisserie chicken, frozen veggies, and Cheddar Bay Biscuit mix, this budget-friendly meal is quick to prep and bakes into a creamy, golden-brown casserole. Perfect for busy weeknights, large families, and picky eaters


Ingredients

  1. ½ cup (1 stick) butter, melted
  2. 4 cups shredded rotisserie chicken
  3. 1 (12 oz) bag frozen mixed vegetables
  4. 1 (11.36 oz) box Red Lobster Cheddar Bay Biscuit Mix
  5. 2 cups whole milk
  6. 1 (14.5 oz) can chicken broth (about 2 cups)
  7. 1 (10.5 oz) can cream of chicken soup
  8. Seasoning to taste (garlic powder, onion powder, black pepper)

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • Melt the butter and pour it evenly into the bottom of the dish.
  • Layer the shredded chicken over the butter.
  • Spread the frozen vegetables evenly over the chicken and sprinkle with garlic powder, onion powder, and black pepper.
  • In a medium bowl, whisk together the milk, Cheddar Bay Biscuit Mix, and included seasoning packet. Pour evenly over the chicken and veggies. DO NOT STIR.
  • In the same bowl, whisk together the cream of chicken soup and chicken broth. Pour evenly over the biscuit mix layer. DO NOT STIR.
  • Bake uncovered for 55-65 minutes, or until the top is deep golden brown. (Check at 55 minutes, as oven times vary.)

 

  • Remove from oven and let rest for 10 minutes before serving to allow the sauce to thicken.

Notes

  • For added flavor, you can mix in some shredded cheddar cheese into the biscuit layer or on top before baking.
  • Feel free to use any mixed vegetables you prefer, or switch to fresh vegetables if desired.

 

  • Make sure to allow the casserole to rest after baking to allow the sauce to thicken.
