Description

This Easy Baked Cod is perfect for beginners! With lemon, garlic, and a blend of spices, this tender and flaky fish dish is full of flavor and ready in just 20 minutes. Serve it with roasted veggies or a light salad for a delicious, healthy meal.

  1. 1 lb cod fillet (fresh or thawed from frozen)
  2. ⅓ cup olive oil
  3. ½ lemon, juiced + zest
  4. 1 tbsp garlic paste (or 2 cloves minced garlic)
  5. 1 tbsp chopped fresh parsley
  6. 1 tsp all-purpose seasoning (like Lawry’s or Goya)
  7. 1 tsp smoked paprika
  8. Kosher salt, to taste
  9. Seafood seasoning (optional)
  10. Lemon slices (for baking)

Instructions

  • Prep the Oven & Baking Dish
    Preheat your oven to 400°F and position the rack in the top third. Line a baking dish with lemon slices to infuse flavor and prevent sticking.

  • Make the Marinade
    In a small bowl, whisk together olive oil, lemon juice & zest, garlic, parsley, all-purpose seasoning, smoked paprika, and salt.

  • Bake the Cod
    Place the cod fillet on top of the lemon slices in the baking dish. Pour the marinade over the fish, using a brush or spoon to coat evenly. Bake at 400°F for 20 minutes, or until the fish flakes easily with a fork.

 

  • Optional Broil for a Golden Finish
    For a slightly crispy, golden top, broil the cod for the last 2 minutes.


Notes

  • Serve with roasted vegetables, rice, or a simple side salad for a well-rounded meal.
  • For extra flavor, add a sprinkle of freshly ground black pepper or more garlic to the marinade.
  • If you prefer a spicier kick, you can add red pepper flakes to the marinade.
