For the cookies:
- 1 package sugar cookie dough mix (or your favorite sugar cookie recipe)
- 8 oz Brick Cream Cheese, softened
- 6 Tbsp unsalted butter, softened
For the frosting:
- 2 cups confectioner’s sugar
- 1 tsp vanilla extract
- Pinch of salt
For the toppings:
- Assorted berries and fruit (blueberries, strawberries, raspberries, kiwis, mandarin oranges)
Instructions
- Prepare the cookie dough: Follow the package or recipe directions for the sugar cookie dough.
- Shape and bake the cookies: Roll the dough to about ¼ inch thick and cut out egg-shaped cookies. Bake according to package or recipe directions. Once baked, remove from the oven and allow to cool. Move to a cooling rack to cool completely.
- Make the frosting: In a large bowl, beat together cream cheese and butter with an electric mixer until light and fluffy. Add vanilla and a pinch of salt. Gradually add powdered sugar, mixing after each addition until fully incorporated.
- Prepare the toppings: Chop the berries and fruit into small pieces.
- Assemble the fruit pizzas: Frost each cooled cookie with a thick layer of cream cheese frosting. Decorate with the chopped fruit and berries.
- Serve: Serve immediately and enjoy!
