Cookies:

Instructions
- Preheat oven: Preheat to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and sugar: In a large bowl, cream together the softened butter and 1 cup of sugar until light and fluffy.
- Add egg and vanilla: Beat in the egg and vanilla extract until well combined.
- Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Prepare cinnamon sugar: In a small bowl, combine the remaining 1/2 cup sugar with 2 teaspoons of cinnamon.
- Shape cookies: Scoop dough into 1-inch balls, roll in cinnamon sugar, and place on prepared baking sheet.
- Bake: Bake for 8–10 minutes, or until the edges are lightly golden. Let cool on a wire rack.
- Make the filling: In a small saucepan, melt 1 tablespoon butter over low heat. Stir in the dulce de leche and heat gently until smooth and spreadable.
- Assemble: Once cookies are completely cool, spread a generous spoonful of dulce de leche on the flat side of one cookie and sandwich with another. Repeat with remaining cookies.
Notes
- For extra texture, add a pinch of sea salt on top of the dulce de leche before sandwiching.
- Store assembled cookies in an airtight container at room temperature for up to 3 days or refrigerate for longer shelf life.
