Ingredients

Scale

Cookies:

  • 1 cup butter, softened
  • 1 cup sugar (plus 1/2 cup for rolling)
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon (to mix with the 1/2 cup sugar for rolling)

Dulce de Leche Filling:

  • 1 tablespoon butter
  • 1 (13.4 oz) can dulce de leche (such as Nestlé Dulce de Lechera)

Instructions

  1. Preheat oven: Preheat to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large bowl, cream together the softened butter and 1 cup of sugar until light and fluffy.
  3. Add egg and vanilla: Beat in the egg and vanilla extract until well combined.
  4. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  5. Prepare cinnamon sugar: In a small bowl, combine the remaining 1/2 cup sugar with 2 teaspoons of cinnamon.
  6. Shape cookies: Scoop dough into 1-inch balls, roll in cinnamon sugar, and place on prepared baking sheet.
  7. Bake: Bake for 8–10 minutes, or until the edges are lightly golden. Let cool on a wire rack.
  8. Make the filling: In a small saucepan, melt 1 tablespoon butter over low heat. Stir in the dulce de leche and heat gently until smooth and spreadable.
  9. Assemble: Once cookies are completely cool, spread a generous spoonful of dulce de leche on the flat side of one cookie and sandwich with another. Repeat with remaining cookies.

Notes

  • For extra texture, add a pinch of sea salt on top of the dulce de leche before sandwiching.
  • Store assembled cookies in an airtight container at room temperature for up to 3 days or refrigerate for longer shelf life.
  • You can make the cookies ahead and fill just before serving for fresher texture.
