Instructions
- Preheat your oven to 325°F (165°C).
- In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture evenly into the bottom of a 9-inch springform pan.
- In a separate bowl, beat the softened cream cheese until smooth.
- Add the melted white chocolate, granulated sugar, and vanilla extract. Mix until well combined.
- Add the eggs one at a time, mixing well after each addition.
- Gently fold in the diced strawberries.
- Pour the cheesecake filling over the prepared crust, spreading it evenly.
- Bake for 45-50 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool inside with the door slightly ajar for about an hour.
- Refrigerate for at least 4 hours or overnight.
- Before serving, top with sliced strawberries and drizzle with melted white chocolate.
