  • 3 large eggs
  • 1 cup fresh strawberries, diced
  • ½ cup fresh strawberries, sliced (for topping)
  • ¼ cup white chocolate chips, melted (for topping)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture evenly into the bottom of a 9-inch springform pan.
  3. In a separate bowl, beat the softened cream cheese until smooth.
  4. Add the melted white chocolate, granulated sugar, and vanilla extract. Mix until well combined.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Gently fold in the diced strawberries.
  7. Pour the cheesecake filling over the prepared crust, spreading it evenly.
  8. Bake for 45-50 minutes, or until the center is set but still slightly jiggly.
  9. Turn off the oven and let the cheesecake cool inside with the door slightly ajar for about an hour.
  10. Refrigerate for at least 4 hours or overnight.
  11. Before serving, top with sliced strawberries and drizzle with melted white chocolate.
