  • ½ cup yellow or white onion, diced
  • 4 Tbsp butter
  • 8 oz mushrooms, sliced (button or baby bella)
  • 2 garlic cloves, minced
  • ½ cup (scant) all-purpose flour
  • 2 ½ cups whole milk
  • 1 cup (heaping) sharp cheddar cheese, shredded
  • 1 cup frozen peas
  • 2 Tbsp Worcestershire sauce
  • ⅛ tsp nutmeg
  • 1 tsp onion powder
  • 1 ½ tsp kosher salt
  • ¼ tsp black pepper
  • ¼ cup cooking sherry
  • 2 cups cooked chicken or turkey, diced
  • ½ cup slivered almonds, toasted
  • 1 cup Parmesan cheese, shredded
  • Non-stick spray

Instructions

  1. Prepare vegetables: In a large skillet, melt butter over medium heat. Add celery, onion, mushrooms, and garlic. Cook until softened and fragrant.
  2. Make the sauce: Sprinkle flour over the vegetables and stir to form a roux. Gradually whisk in milk, cooking until sauce thickens.
  3. Add cheese and seasonings: Stir in sharp cheddar cheese until melted. Add frozen peas, Worcestershire sauce, nutmeg, onion powder, salt, and black pepper. Mix well.
  4. Add sherry and chicken: Stir in cooking sherry and diced cooked chicken or turkey. Heat through.
  5. Combine with pasta: Toss the sauce mixture with cooked spaghetti.
  6. Assemble: Spray a baking dish with non-stick spray. Pour pasta mixture into the dish. Top with toasted slivered almonds and shredded Parmesan cheese.
  7. Bake: Preheat oven to 350°F (175°C). Bake for 20–25 minutes, until bubbly and golden on top.
  8. Serve warm.
