- ½ cup yellow or white onion, diced
- 4 Tbsp butter
- 8 oz mushrooms, sliced (button or baby bella)
- 2 garlic cloves, minced
- ½ cup (scant) all-purpose flour
- 2 ½ cups whole milk
- 1 cup (heaping) sharp cheddar cheese, shredded
- 1 cup frozen peas
- 2 Tbsp Worcestershire sauce
- ⅛ tsp nutmeg
- 1 tsp onion powder
- 1 ½ tsp kosher salt
- ¼ tsp black pepper
- ¼ cup cooking sherry
- 2 cups cooked chicken or turkey, diced
- ½ cup slivered almonds, toasted
- 1 cup Parmesan cheese, shredded
- Non-stick spray
Instructions
- Prepare vegetables: In a large skillet, melt butter over medium heat. Add celery, onion, mushrooms, and garlic. Cook until softened and fragrant.
- Make the sauce: Sprinkle flour over the vegetables and stir to form a roux. Gradually whisk in milk, cooking until sauce thickens.
- Add cheese and seasonings: Stir in sharp cheddar cheese until melted. Add frozen peas, Worcestershire sauce, nutmeg, onion powder, salt, and black pepper. Mix well.
- Add sherry and chicken: Stir in cooking sherry and diced cooked chicken or turkey. Heat through.
- Combine with pasta: Toss the sauce mixture with cooked spaghetti.
- Assemble: Spray a baking dish with non-stick spray. Pour pasta mixture into the dish. Top with toasted slivered almonds and shredded Parmesan cheese.
- Bake: Preheat oven to 350°F (175°C). Bake for 20–25 minutes, until bubbly and golden on top.
- Serve warm.
