  1. 1 lb (450g) smoked sausage or andouille sausage, sliced
  2. 1 tablespoon olive oil
  3. 1 small onion, diced
  4. 1 bell pepper (red or green), diced
  5. 2 cloves garlic, minced
  6. 1 teaspoon smoked paprika
  7. ½ teaspoon dried oregano
  8. ½ teaspoon salt (adjust to taste)
  9. ½ teaspoon black pepper
  10. 1 cup uncooked white rice (or brown rice, adjusted for cooking time)
  11. 2 cups chicken broth
  12. 1 can (14.5 oz) diced tomatoes, drained
  13. 1 cup frozen peas or corn (optional)
  14. ½ cup shredded cheddar or Parmesan cheese (optional)
  15. Chopped parsley or green onions (for garnish)

Instructions

  • Cook the Sausage & Veggies
    Heat olive oil in a large skillet over medium heat.
    Add sliced sausage and cook until browned (about 3-4 minutes per side). Remove and set aside.
    In the same pan, sauté onion, bell pepper, and garlic until softened (about 3 minutes).

  • Add Rice & Seasonings
    Stir in rice, smoked paprika, oregano, salt, and black pepper.
    Toast the rice for 1-2 minutes, stirring frequently.

  • Simmer Everything Together
    Pour in chicken broth and diced tomatoes.
    Return the cooked sausage to the pan and bring to a boil.
    Reduce heat, cover, and simmer for 15-18 minutes, until the rice is tender.
    Stir in peas or corn and cook for an additional 2 minutes.

  • Finish & Serve
    If using, sprinkle cheese over the top and let it melt.
    Garnish with fresh parsley or green onions.
