Description

  1. For the Fritters:

    • 1 1/2 cups all-purpose flour

    • 1/4 cup granulated sugar

    • 2 teaspoons baking powder

    • 1/2 teaspoon salt

    • 1/2 teaspoon cinnamon

    • 2/3 cup milk

    • 2 large eggs

    • 1 teaspoon vanilla extract

    • 2 tablespoons melted butter

    • 1 1/2 cups peeled and diced fresh peaches

    • Oil for frying

    For the Glaze:

    1. 1 cup powdered sugar

    2. 2 tablespoons milk

    3. 1/2 teaspoon vanilla extract


Instructions

  • In a large mixing bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.

  • In another bowl, whisk together milk, eggs, vanilla, and melted butter until well combined.

  • Add the wet ingredients to the dry ingredients and stir just until combined. Do not overmix.

  • Gently fold in the diced fresh peaches.

  • Heat oil in a deep skillet or fryer to 350°F (175°C).

  • Drop spoonfuls of batter into the hot oil, a few at a time, making sure not to overcrowd the pan.

  • Fry until golden brown and cooked through, about 2-3 minutes per side.

  • Remove fritters with a slotted spoon and drain on paper towels.

  • For the glaze, whisk powdered sugar, milk, and vanilla until smooth.

 

  • Drizzle or dip the warm fritters in the glaze and allow it to set slightly before serving.


Notes

  • You can adjust the amount of cinnamon to your taste.

  • Make sure the oil is hot enough (350°F) to avoid soggy fritters.

  • The glaze is optional but adds a sweet finishing touch.

 

  • For a lighter glaze, add more milk until the desired consistency is reached.
