  1. 1 lb chicken breast, diced

  2. 1 cup Arborio rice

  3. 4 cups chicken broth

  4. 1 cup spinach, chopped

  5. 1/2 cup sun-dried tomatoes, chopped

  6. 1/2 cup Parmesan cheese

  7. 1/2 cup white wine (optional)

  8. 2 tbsp olive oil

  9. Salt and pepper to taste

Instructions
