Description

Ingredients

  • 2 cups water
  • 2 cups granulated sugar
  • 2 tablespoons lemon juice

Instructions

  1. Separate yellow petals from green parts of dandelions.
  2. Simmer petals in water for 10 minutes, then steep for 30 minutes.
  3. Strain mixture, pressing petals to extract all liquid.
  4. Add sugar and lemon juice to strained liquid.
  5. Heat until dissolved, then boil without stirring to hard crack stage (300-310°F).
  6. Drop spoonfuls onto parchment paper or pour into oiled molds.
  7. Allow to cool completely before storing in an airtight container.

Notes

  • Ensure you only use the yellow petals and discard any green parts to avoid bitterness.
  • Boiling to the hard crack stage (300-310°F) is essential for the candy to set properly.
