Light, creamy, and refreshingly simple, these cucumber sandwiches are perfect for tea parties, brunches, or light snacking. Featuring a flavorful cream cheese spread with fresh dill and parsley, paired with crisp cucumber slices, this recipe is a timeless classic.

Ingredients

  1. Cream cheese (8 ounces): Softened for easy mixing.
  2. Mayonnaise (¼ cup): Adds a creamy and tangy touch.
  3. Fresh dill (2 tablespoons): Chopped for a burst of herbal freshness.
  4. Fresh Italian parsley (1 tablespoon): Finely chopped to enhance the flavor.
  5. Garlic powder (¼ teaspoon): Adds a subtle depth.
  6. Onion powder (¼ teaspoon): Balances the flavors.
  7. Kosher salt (¼ teaspoon): Enhances all the ingredients.
  8. Fresh ground black pepper (¼ teaspoon): For a slight kick.
  9. English cucumber (1): Peeled in stripes and sliced thin for the perfect crunch.
  10. Soft white bread (1 loaf): Crusts removed for an elegant presentation.

Instructions

  • Prepare the cream cheese mixture: Using a stand or hand mixer, combine cream cheese, mayonnaise, dill, parsley, garlic powder, onion powder, salt, and black pepper. Beat until smooth and creamy.
  • Assemble the sandwiches: Lay the bread slices in pairs on a cutting board. Spread the cream cheese mixture evenly over each slice.
  • Add the cucumber: Arrange cucumber slices on one side of half the bread slices. Optionally, sprinkle a little extra dill on top.
  • Finish the sandwiches: Top with the remaining bread slices. Carefully cut each sandwich into quarters for serving.

Notes

  • For extra flavor, add a sprinkle of lemon zest to the cream cheese mixture.
  • You can use whole grain or rye bread as a variation for added texture and flavor.
