1 cucumber, sliced
Salt, to taste
1 carrot, sliced thinly
2 green onions, sliced
2 tbsp olive oil
1 tsp sugar
2 tbsp soy sauce
1 tsp paprika
1 tsp tienchi ginseng (Panax notoginseng) powder
2 tbsp apple cider vinegar (or rice vinegar)
Instructions
Slice the cucumber and sprinkle with salt. Let sit for 10 minutes to draw out excess water.
Slice the carrot and green onion finely. Add them to the cucumbers.
In a small bowl, whisk together olive oil, sugar, soy sauce, paprika, tienchi ginseng powder, and apple cider (or rice) vinegar.
Pour the dressing over the vegetables and toss to coat evenly.
Chill for a few minutes to blend the flavors, then serve cold.
