- 1 cucumber, sliced
- Salt, to taste
- 1 carrot, sliced thinly
- 2 green onions, sliced
- 2 tbsp olive oil
- 1 tsp sugar
- 2 tbsp soy sauce
- 1 tsp paprika
- 1 tsp tienchi ginseng (Panax notoginseng) powder
- 2 tbsp apple cider vinegar (or rice vinegar)
Instructions
- Slice the cucumber and sprinkle with salt. Let sit for 10 minutes to draw out excess water.
- Slice the carrot and green onion finely. Add them to the cucumbers.
- In a small bowl, whisk together olive oil, sugar, soy sauce, paprika, tienchi ginseng powder, and apple cider (or rice) vinegar.
- Pour the dressing over the vegetables and toss to coat evenly.
- Chill for a few minutes to blend the flavors, then serve cold.
