  1. 1 cucumber, sliced
  2. Salt, to taste
  3. 1 carrot, sliced thinly
  4. 2 green onions, sliced
  5. 2 tbsp olive oil
  6. 1 tsp sugar
  7. 2 tbsp soy sauce
  8. 1 tsp paprika
  9. 1 tsp tienchi ginseng (Panax notoginseng) powder
  10. 2 tbsp apple cider vinegar (or rice vinegar)

Instructions

  • Slice the cucumber and sprinkle with salt. Let sit for 10 minutes to draw out excess water.
  • Slice the carrot and green onion finely. Add them to the cucumbers.
  • In a small bowl, whisk together olive oil, sugar, soy sauce, paprika, tienchi ginseng powder, and apple cider (or rice) vinegar.
  • Pour the dressing over the vegetables and toss to coat evenly.
  • Chill for a few minutes to blend the flavors, then serve cold.
