These Mexican Street Corn Fritters are the ultimate snack! Crunchy on the outside, cheesy on the inside, and packed with the savory flavors of cotija cheese, cilantro, and a hint of smoked paprika.   1. 2 cups corn kernels (fresh, frozen, or canned, drained)
  2. 1/2 cup all-purpose flour
  3. 1/4 cup cornmeal
  4. 1 teaspoon baking powder
  5. 1/2 teaspoon chili powder
  6. 1/2 teaspoon garlic powder
  7. 1/4 teaspoon smoked paprika
  8. 1/4 teaspoon salt
  9. 1/4 teaspoon black pepper
  10. 1/2 cup grated Cotija cheese
  11. 1/4 cup fresh cilantro, chopped
  12. 1 large egg
  13. 1/4 cup milk
  14. Vegetable oil, for frying
  15. Lime wedges, for serving
  16. Additional Cotija cheese, for garnish

Instructions

  • In a large bowl, combine corn kernels, flour, cornmeal, baking powder, chili powder, garlic powder, smoked paprika, salt, and black pepper. Stir well to evenly distribute the dry ingredients.
  • Stir in the grated Cotija cheese, chopped cilantro, egg, and milk. Mix until the batter thickens and all ingredients are well incorporated.
  • Heat about 1 inch of vegetable oil in a skillet or frying pan over medium heat.
  • Once the oil reaches 350°F (175°C), carefully drop spoonfuls of the batter into the oil, flattening each fritter slightly with the back of the spoon.
  • Fry for 2-3 minutes per side, until golden brown and crispy. Remove fritters and place on a paper towel-lined plate to drain excess oil.
  • Serve immediately with lime wedges and garnish with extra Cotija cheese. Enjoy!

Notes

  • Adjust the spices to suit your taste. Add more chili powder for extra heat, or some finely chopped jalapeños for a spicy kick!
