- 1/4 cup milk

Instructions
- In a large bowl, combine corn kernels, flour, cornmeal, baking powder, chili powder, garlic powder, smoked paprika, salt, and black pepper. Stir well to evenly distribute the dry ingredients.
- Stir in the grated Cotija cheese, chopped cilantro, egg, and milk. Mix until the batter thickens and all ingredients are well incorporated.
- Heat about 1 inch of vegetable oil in a skillet or frying pan over medium heat.
- Once the oil reaches 350°F (175°C), carefully drop spoonfuls of the batter into the oil, flattening each fritter slightly with the back of the spoon.
- Fry for 2-3 minutes per side, until golden brown and crispy. Remove fritters and place on a paper towel-lined plate to drain excess oil.
- Serve immediately with lime wedges and garnish with extra Cotija cheese. Enjoy!
