- 2 pounds sirloin steak, cut into 1-inch cubes
- 4 large russet potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large bowl, season the cubed sirloin steak with salt, pepper, and paprika. Toss to coat evenly.
- Place the diced potatoes and chopped onion in the bottom of the crockpot. Add the seasoned steak on top.
- In a separate bowl, mix together the minced garlic, beef broth, Worcestershire sauce, and a pinch of salt and pepper. Pour this mixture over the steak and potatoes in the crockpot.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the steak is tender and the potatoes are cooked through.
- About 15 minutes before serving, sprinkle the shredded cheddar cheese over the top and cover to allow it to melt.
- Serve hot, drizzled with sour cream and garnished with chopped green onions.
Notes
- For a richer flavor, you can use half-and-half or heavy cream instead of sour cream.
- If you prefer, you can add extra veggies such as bell peppers or mushrooms to the dish.
- Leftovers can be stored in the fridge for up to 3 days and reheated in the microwave or on the stove.
