This Crockpot Hobo Casserole is a hearty, comforting meal that’s perfect for busy days. With ground beef, potatoes, creamy mushroom soup, and cheddar cheese, it’s a one-pot wonder that’s sure to satisfy. Just toss everything into your slow cooker and let it work its magic

Ingredients

  1. 1 lb ground beef
  2. 1 (15 ounce) can diced tomatoes, undrained
  3. 1 (10.75 ounce) can condensed cream of mushroom soup
  4. 1 cup chopped onion
  5. 2 cups cooked potatoes, cubed
  6. 1 cup shredded cheddar cheese
  7. 1/2 cup beef broth
  8. 1 teaspoon dried thyme
  9. Salt and pepper to taste

Instructions

  • Brown the Ground Beef:
    Brown the ground beef in a skillet over medium-high heat, draining off any excess grease.

  • Transfer to Crockpot:
    Transfer the browned ground beef to your slow cooker.

  • Add the Remaining Ingredients:
    Stir in the diced tomatoes (undrained), cream of mushroom soup, chopped onion, cubed potatoes, shredded cheddar cheese, beef broth, and dried thyme. Season with salt and pepper to taste.

  • Cook:
    Cook on low for 6-8 hours, or on high for 3-4 hours, or until heated through and bubbly.

 

  • Serve:
    Serve hot and enjoy this easy and comforting casserole

Notes

  • You can add frozen vegetables (such as peas or carrots) for extra color and nutrition.
  • For a spicier version, add a pinch of red pepper flakes or chopped green chiles.
  • Use gluten-free cream of mushroom soup if needed.
