Meat Mixture

  • 1 lb ground beef
  • 1 lb Italian sausage
  • 1 medium sweet onion, diced
  • 4 cloves garlic, minced

Potato Layer

  • 4 lbs russet potatoes, cleaned and sliced ¼ inch thick

Creamy Sauce

  • 2 cans cream of chicken soup
  • 1½ cups milk
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp red pepper flakes

Topping

  • 2 cups shredded cheddar cheese

  1. In a large skillet over medium heat, brown ground beef and Italian sausage with diced onion and garlic until fully cooked. Drain any excess fat.
  2. In a bowl, whisk together cream of chicken soup, milk, salt, pepper, garlic powder, and red pepper flakes to create the sauce.
  3. Lightly grease the inside of your crockpot. Layer half of the sliced potatoes on the bottom.
  4. Spread half of the meat mixture evenly over the potatoes.
  5. Pour half of the creamy soup mixture over the meat layer.
  6. Repeat the layers with the remaining potatoes, meat, and sauce.
  7. Cover and cook on low for 6–8 hours, or until the potatoes are fork-tender.
  8. About 30 minutes before serving, sprinkle shredded cheddar cheese over the top. Cover and let the cheese melt into a gooey layer.
  9. Scoop and serve warm straight from the crockpot.

Notes

  • You can prep the meat and sauce the night before for a quicker morning setup.
  • Try using a mix of cheddar and mozzarella for an extra cheesy finish.
  • Swap cream of chicken soup for cream of mushroom or cheddar soup for variation.
