  1. 2 lbs boneless skinless chicken breasts
  2. 1 onion, sliced
  3. 1 bell pepper (any color), sliced
  4. 1 green bell pepper, sliced
  5. 1 packet fajita seasoning mix (or homemade seasoning)
  6. 1/2 cup chicken broth or water
  7. 1 tablespoon olive oil
  8. 1 teaspoon cumin
  9. 1 teaspoon chili powder
  10. 1/2 teaspoon garlic powder
  11. Salt and pepper to taste
  12. Tortillas for serving
  13. Optional toppings: sour cream, guacamole, salsa, shredded cheese

Instructions

  • Prepare the Crockpot: Place the chicken breasts at the bottom of your slow cooker.
  • Add Vegetables & Seasoning: Top the chicken with sliced onions and bell peppers. Sprinkle the fajita seasoning, cumin, chili powder, garlic powder, salt, and pepper over the veggies and chicken.
  • Add Liquid: Pour the chicken broth (or water) and olive oil over the ingredients in the crockpot.
  • Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
  • Shred the Chicken: Once cooked, remove the chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken to the crockpot and mix with the veggies and juices.
  • Serve: Warm up the tortillas and serve the chicken fajitas with your favorite toppings like sour cream, guacamole, salsa, or shredded cheese.

Notes

  • If you prefer spicier fajitas, you can add a chopped jalapeño or extra chili powder to the mix.
