A tender and flavorful Crockpot Beef and Broccoli recipe that’s easy to prepare and perfect for a weeknight dinner. The beef is slow-cooked to perfection in a savory soy sauce and garlic sauce, then thickened and served with fresh broccoli over rice.

  1. 1 pound boneless beef chuck roast, sliced into thin strips
  2. 1 cup beef consomme
  3. 1/2 cup soy sauce
  4. 1/3 cup brown sugar
  5. 1 tablespoon sesame oil
  6. 3 garlic cloves, minced
  7. 2 tablespoons cornstarch
  8. 2 tablespoons cooled sauce from the crock pot after being cooked
  9. Fresh broccoli florets (as many as desired)
  10. Hot cooked rice

Instructions

  • Place Beef in Crockpot: Add the sliced beef to the crockpot.
  • Prepare the Sauce: In a small bowl, combine the beef consomme, soy sauce, brown sugar, sesame oil, and minced garlic. Pour this sauce over the beef in the crockpot.
  • Cook: Cover and cook on low for 6-8 hours, or until the beef is tender.
  • Thicken the Sauce: In a cup, mix the cornstarch and 2 tablespoons of cooled sauce from the crockpot until smooth. Add this mixture back into the crockpot and stir well to combine. If the sauce isn’t thickening, you can bring the sauce to a boil on the stovetop with the cornstarch mixture until the desired consistency is reached.
  • Add the Broccoli: Add the fresh broccoli florets to the crockpot, stirring to combine.
  • Cook the Broccoli: Cover and cook on high for an additional 30 minutes, allowing the sauce to boil and thicken.
  • Serve: Serve the beef and broccoli over hot cooked rice.

Notes

  • You can adjust the amount of broccoli based on your preference for vegetables.
  • If you prefer a more flavorful sauce, you can add extra garlic or a splash of soy sauce.
  • Make sure to stir the sauce frequently towards the end to ensure it thickens to your liking.
  • This dish can be served with steamed or jasmine rice for extra flavor.
