Description

These Crispy Potato, Egg & Cheese Tacos are a quick and delicious way to enjoy a flavorful vegetarian dinner or satisfying breakfast. Filled with golden, crispy potatoes, gooey melted cheese, and a perfectly cooked egg, these tacos are ready in just 10 minutes, making them an ideal option for a busy day.

  • 2 corn or flour tortillas
  • 1 tablespoon olive oil or butter
  • ½ cup grated Russet potato
  • ¼ cup grated Cheddar or Asiago cheese (or cheese of choice)
  • 2 eggs
  • Kosher salt and pepper to taste
  • Hot sauce (optional)
  • Lime wedges (optional)

Instructions

  1. Warm the tortillas in your preferred method: on a nonstick skillet over medium heat, directly over the flame, or in a toaster or toaster oven. Transfer to a plate.
  2. Heat olive oil or butter in a large nonstick skillet over medium heat. Sprinkle the grated potato into two piles in the pan, spreading each pile to about the size of the tortilla using a spatula or fork. Make sure the potato strands are touching but not clumped for crispier results.
  3. Salt the potato and evenly sprinkle the grated cheese over the potato. It’s okay if some cheese touches the pan, as this will create crispy edges like a grilled cheese.
  4. Make an indent in the center of each pile and crack an egg into the center. Season with salt and pepper. Cover the skillet and cook for 3 to 4 minutes, until the cheese is golden and the egg white is cooked through.
  5. Use a spatula to gently slide the crispy potato, cheese, and egg onto the tortillas.
  6. Serve with hot sauce and lime wedges, or your favorite taco toppings, making sure to enjoy the runny yolk as the built-in sauce.

  • If you prefer extra crispy potatoes, cook them longer, ensuring the edges are golden brown.
