These crispy Parmesan zucchini rounds are the perfect snack or side dish—crispy, cheesy, and packed with flavor! Perfect for a healthier alternative to fries
Ingredients
- 2 medium zucchinis, sliced into 1/4-inch thick rounds
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs (preferably panko for extra crunch)
1/4 cup oats
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1 egg, beaten (for egg wash)
Olive oil for frying
Instructions
Slice zucchinis into 1/4-inch thick rounds.
In a bowl, mix breadcrumbs, oats, Parmesan, oregano, garlic powder, onion powder, salt, and pepper.
In a separate bowl, beat the egg.
Dip zucchini rounds into egg wash, then coat in the breadcrumb mixture, pressing gently to adhere.
Heat 1/2 inch of olive oil in a skillet over medium-high heat. Fry zucchini rounds for 2-3 minutes per side, until golden and crispy.
Place fried zucchini on a paper towel-lined plate to drain excess oil.
Serve hot and enjoy!
Notes
For a gluten-free option, substitute breadcrumbs with gluten-free panko or almond meal. These zucchini rounds can also be baked at 400°F (200°C) for 15-20 minutes for a lighter option.
