1/2 cup panko breadcrumbs (or oats for gluten-free)
1 tsp dried oregano
1/2 tsp garlic powder
1/2 tsp onion powder
Salt & pepper to taste
Olive oil spray
Preheat the Oven: Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
Prepare the Coating: In a bowl, mix Parmesan, breadcrumbs (or oats), oregano, garlic powder, onion powder, salt, and pepper.
Coat the Zucchini Rounds: Lightly spray zucchini rounds with olive oil, then press each into the breadcrumb mixture to coat both sides.
Arrange on Baking Sheet: Arrange zucchini rounds on the prepared baking sheet and spray lightly with more olive oil.
Bake: Bake for 15-20 minutes until golden and crispy, flipping the zucchini halfway through for even browning.
Serve and Enjoy: Serve hot as a snack or side dish!
For a gluten-free version, swap the panko breadcrumbs with oats.
You can also serve these zucchini rounds with a dipping sauce like marinara or ranch for extra flavor.
Make sure the zucchini rounds are evenly coated to ensure a crispy texture.
