These golden, crunchy zucchini rounds are the perfect snack or side dish! Packed with flavor and a satisfying crunch, they’ll disappear fast. Baked to crispy perfection and seasoned with parmesan, garlic, and oregano, they are a healthy and low-carb treat

  1. 2 medium zucchinis, sliced into 1/4-inch rounds

  2. 1/2 cup grated Parmesan cheese

  3. 1/2 cup panko breadcrumbs (or oats for gluten-free)

  4. 1 tsp dried oregano

  5. 1/2 tsp garlic powder

  6. 1/2 tsp onion powder

  7. Salt & pepper to taste

  8. Olive oil spray

Instructions

  • Preheat the Oven: Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

  • Prepare the Coating: In a bowl, mix Parmesan, breadcrumbs (or oats), oregano, garlic powder, onion powder, salt, and pepper.

  • Coat the Zucchini Rounds: Lightly spray zucchini rounds with olive oil, then press each into the breadcrumb mixture to coat both sides.

  • Arrange on Baking Sheet: Arrange zucchini rounds on the prepared baking sheet and spray lightly with more olive oil.

  • Bake: Bake for 15-20 minutes until golden and crispy, flipping the zucchini halfway through for even browning.

Notes

  • For a gluten-free version, swap the panko breadcrumbs with oats.
