Instructions

- Stir in the chopped red bell pepper, green onions, onion, grated potato, and grated cheese.
- Heat a non-stick pan over low heat and transfer the mixture into the pan, spreading it evenly.
- Cover the pan and cook for about 6 minutes until the bottom is golden.
- Carefully flip the fritters and cook for an additional 3 minutes until cooked through and golden on both sides.
- Serve warm, optionally with sour cream or a dipping sauce.
