Description

Juicy, seasoned chicken bites cooked in a flavorful wine and garlic butter sauce, perfect for serving as an appetizer or paired with mashed potatoes and roasted vegetables.


Ingredients

  • ½ tsp onion powder
  • ½ tsp basil
  • ½ tsp oregano
  • ¼ tsp pepper
  • ¼ tsp paprika
  • ¼ tsp mustard powder
  • 12 tbsp olive oil
  • 1 ½ lbs boneless skinless chicken breasts
  • Salt, to taste
  • ¾ cup dry white wine
  • ¾ cup chicken broth
  • ¼ tsp seasoned salt
  • 4 tbsp salted butter
  • 45 cloves garlic, minced
  • 4 sprigs fresh thyme
  • 2 tbsp fresh parsley, minced
  • Fresh lemon slices, for serving

Instructions

  1. Combine onion powder, basil, oregano, pepper, paprika, and mustard powder in a small bowl. Set aside.
  2. Cover the chicken with plastic wrap and tenderize with a meat mallet. Cut into 1-inch cubes and pat dry. Season with salt and the seasoning mix, tossing to coat.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the chicken in batches, turning to sear all sides, for about 5 minutes or until cooked through. Remove and set aside.
  4. Turn off the heat and add wine, chicken broth, and seasoned salt to the skillet. Turn the heat to medium and scrape the bottom and sides of the skillet to incorporate any brown bits into the sauce. Simmer for 8-10 minutes until the sauce reduces by half and the alcohol scent dissipates.
  5. Reduce the heat to medium-low and add butter, garlic, and thyme. Simmer for 1-2 minutes.
  6. Return the chicken to the skillet, including any juices. Add parsley and toss to combine. Heat for 2-3 minutes.
  7. Squeeze fresh lemon slices over the dish. Serve with toothpicks or alongside mashed potatoes and roasted green beans. Enjoy!

Notes

  • To make the sauce richer, you can add a splash of heavy cream after reducing the wine and broth.
