  2. 1 cup all-purpose flour

  3. 2 tbsp sugar

  4. 1 tbsp baking powder

  5. 1/2 tsp salt

  6. 1 egg

  7. 1 cup buttermilk

  8. 1/4 cup vegetable oil (for frying)

  9. 1/4 cup melted butter (for extra flavor)

Instructions

  • In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.

  • In a separate bowl, whisk together the egg, buttermilk, and melted butter.

  • Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be slightly thick.

  • Heat vegetable oil in a frying pan over medium-high heat.

  • Scoop spoonfuls of the batter into the hot oil, gently flattening them into round shapes.

  • Fry for 2-3 minutes on each side, or until golden brown and crispy.

  • Remove the cornbread from the oil and drain on a paper towel.
