Pizza meets chicken parmesan in this easy and irresistible Pizza Parmesan Chicken! Juicy, breaded chicken breasts are baked to golden perfection, then topped with marinara, melty mozzarella, pepperoni, and fresh basil—just like your favorite pizza! Ingredients
4 boneless, skinless chicken breasts (6 oz each)
2 large eggs
2 tbsp fresh lemon juice
1 cup flour
1 cup panko breadcrumbs
1 tbsp dried Italian seasoning
½ cup grated Parmesan cheese, plus more for garnish
1 tsp black pepper
¼ tsp coarse salt
1 pint cherry tomatoes (12 oz)
1 tbsp olive oil
¾ cup marinara sauce
1½ cups shredded mozzarella cheese
16 slices pepperoni
Small fresh basil leaves for garnish
Instructions
Preheat oven to 425°F (220°C). Spray a 10×17-inch casserole dish with nonstick spray.
Pound each chicken breast to just over ¾-inch thick for even cooking.
Set up 3 shallow bowls: one with whisked eggs and lemon juice, one with flour, and one with panko, Italian seasoning, Parmesan, pepper, and salt.
Dip chicken in egg mixture, then dredge in flour, then dip in egg again and press into breadcrumb mixture.
Place chicken in prepared dish. Scatter cherry tomatoes around, drizzle with olive oil, and season with salt and pepper.
Bake for 18 minutes.
Top each breast with 2 tbsp marinara, ¼ cup mozzarella, and 4 slices pepperoni.
Return to oven for 5 minutes or until cheese is melted and chicken reaches 165°F.
Garnish with Parmesan and fresh basil. Serve hot.
Notes
You can use sliced Roma tomatoes instead of cherry tomatoes if preferred. To save time, use pre-sliced deli chicken cutlets. This dish pairs well with pasta, garlic bread, or a fresh green salad
