Description

These Tortilla Pizza Pockets are crispy on the outside, gooey on the inside, and ridiculously easy to make! Perfect for a quick dinner, snack, or party appetizer. Stuffed with melty mozzarella, pizza sauce, and your favorite toppings, they’re kid-approved and freezer-friendly.


Ingredients

4 large flour tortillas
1/2 cup pizza sauce
1 cup shredded mozzarella cheese
1/2 cup chopped vegetables (like bell peppers, onions, mushrooms)
1/2 cup beef pepperoni or cooked ground beef (optional)
1/2 teaspoon Italian seasoning
2 tablespoons unsalted butter, melted
Olive oil or nonstick spray (for cooking)


Instructions

Preheat a large nonstick skillet or griddle over medium heat.
Lay a tortilla flat and spread 2 tablespoons of pizza sauce on one half, leaving a small border.
Top with mozzarella, chopped vegetables, and optional meat. Sprinkle with Italian seasoning.
Fold the tortilla in half into a semicircle.
Brush the outside of each folded tortilla with melted butter.
Place the pockets in the skillet and cook for 2–3 minutes per side, until golden and crisp.
Press gently with a spatula while cooking to ensure even browning.
Slice in half and serve hot with extra pizza sauce for dipping.


Notes

Customize with any toppings you love—olives, jalapeños, or even pineapple.
For extra crispiness, lightly oil the skillet between batches.
